There are so many great reasons, including making sugar and salt replacements, that this tool is paramount. Also, it is a great way to put fruits up for the winter months.

There are many to choose from, and I like the standard 9 tray Excalibur, myself as it is a workhorse. I don't order the new-fangled electronic digital models. Stick with the analog, simple model and you will be far happier. Even if a timer or element goes out 6 years down the line, they are affordable and super easy to fix in the simple model.
