For the past 45 years, I've explored different forms of art, including sculpting, clay art, photography, art administration, and gallery ownership. But my creative life was also intertwined with my exploration of different culinary lifestyles, such as Vegetarianism, Macrobiotics, Thai Cuisine, and my fascination with the lost art of foraging and wild fermentation.
In 2010, I suffered a serious injury and decided to avoid surgeries and prescription drugs by embracing a 100% plant-based diet. This choice expedited my healing process, improved my health, and set me on a passionate new career path.
Since 2011, I've been focused on the culinary arts, serving as the lead instructor and culinary director of an award-winning, international plant-based culinary institute.
In 2020, I founded a spectacular new academy, bringing years of teaching experience to a new approach in teaching food-as-medicine.
I envision the kitchen as a sacred space where we can play and explore, breaking free from the unhealthy lifestyle fostered by the processed food industry. As a certified Yoga instructor, I believe in promoting a symbiosis of physical, nutritional, and spiritual practices in our daily lives.
My ultimate mission is to be an active voice in the global awakening of the integral relationship between a living-foods lifestyle and optimal health. Join me on this journey towards a healthier, more sustainable future.

"Chef James was a joy to work with during our wedding weekend. He cooked 7 meals for 50+ guests of all ages and people could not get enough of his food. He was warm and friendly, while also being professional, on time, and on budget. He sourced food from local farmers. He was a big hit with the kids as they watched him cook (and he also provided some kid-friendly options). He also accommodated the gluten- and dairy-free among us.
